Squash Blossoms

Ingredients:

24 Squash Blossoms

3 eggs

1/2 tsp salt

1/2 cup unbleached flour

1/2 tsp baking powder

1 T chopped parsley

1/2 clove garlic, finely chopped

1 T freshly grated parmesan cheese

Oil

Directions:

Wash squash blossoms, drain them, and place them in a towel. Allow blossoms to remain in towel in a cool place until the batter is prepared. Beat together eggs, salt, flour and baking powder. Batter should have a fairly thick coating consistency. Add parsley, garlic and cheese.

Heat oil at a depth of 1/2 inch in a heavy small pan. Dip blossoms in batter and fry one at a time until golden. Drain.
