Peach Upside Down Cake

Ingredients:
1/4 cup butter
2/3 cup packed brown sugar
2 cups peeled & sliced fresh peaches
4 eggs, separated
1 tsp vanilla
1 cup granulated sugar
2 T butter, melted & slightly cooled
1 cup sifted cake flour, or 3/4 cup unsifted all-purpose flour
1 tsp baking powder
1/4 tsp salt
Directions:
Preheat oven to 325 degrees. Melt the 1/4 cup butter in a 10-inch oven-going skillet (non-stick is best); remove from heat. Stir in brown sugar until combined; spread evenly in a skillet. Arrange peach slices atop brown sugar mixture.
In a large mixing bowl, beat egg whites & vanilla at medium speed until soft peaks form. Gradually add granulated sugar, beating until soft peaks form. In a small bowl, combine egg yolks & 2 T melted better. Stir into egg white mixture. Sift together flour, baking powder & salt. Sprinkle 1/4 flour mix over egg mix and gently stir by hand. Repeat until flour mixture is all blended in. Carefully spread batter atop peaches.
Bake 40-45 minutes, test with a toothpick for doneness. Cool in pan on wire rack for 10 minutes. Loosen edges of cake; turn onto a platter. Cool about 30 minutes.
